Join Farm2Clinic Cooking Classes

Learn how to cook healthy budget-friendly meals and support ECU and eastern North Carolina!

Participate by observing or joining in on preparing and taste-testing 10+ recipes. All recipes will be discussed for modifications needed for dietary restrictions and common ingredients substitutions. Recipes are budget-friendly, quick, simple, easy, tasty and align with the strongest clinical, health, and nutrition science/research.

Funds generated will support the student-led Farm2Clinic initiative that provides health and nutrition care to rural, medically under-served patients. Funds will pay for fuel to travel to over 23 rural counties, cost for community cooking demonstrations/supplies, and directly fund ECU student stipends.

Class 1 — Savor the Flavor: Fast, Simple, Budget-Friendly Healthy Meals – Favorite Dishes

The class will be Wednesday, September 18 from 6-8pm in Room 1405/flex space of the Health Sciences Building

Menu

  • Southern/soul food favorites – keeping flavor, improving nutrition
  • Modern Italian – low-carb, high-protein, nutrient-dense
  • Healthy 1-sheet pan meals
  • Dessert: Apple crisp and homemade ice cream

Class 2 — Healthy Eating on the Go: Breakfast, Snacks and Lunches

This class will be Wednesday, September 25 from 6-8pm in Room 1405/flex space of the Health Sciences Building

Menu

  • Breakfast: pizza, burritos, whole grain pancakes
  • Snacks: fruit/veggie dips, high protein/fiber balls, homemade chips, egg bites
  • Lunch: wraps and salads
